Blueberry and Citrus Sorbet 0 (0) Rate Print Email Save Prep Time 30 minutes to prepare plus approx 10 hours to freeze Yield Serves: 6 Category Desserts and Baking Ingredients 350ml Ocean Spray® Blueberry Juice Drink100g caster sugarJuice of 2 fresh oranges Juice of 2 fresh limes 2 large egg whites, fork-whisked Directions Pour the Blueberry Juice Drink into a saucepan and add the sugar. Heat until all the sugar has dissolved. Cool the syrup over iced water until cold. Add the orange and lime juice. Pour the sorbet into a pre-chilled electric ice-cream maker and churn for 10 minutes. Then pour in the fork-whisked egg whites. Continue to churn for a further 20 minutes or until firm and dense. Scoop into a freezer-proof container and freeze for at least 2 hours. If you do not have an ice cream maker pour the sorbet mixture into a freezer proof container and freeze for an hour. Add the egg white and whisk with a fork. Return to the freezer, beating the mixture with a fork every hour so to break up any large ice crystals. Serve with a handful of fresh blueberries.
