150g butter or margarine, softened
110g brown sugar
2 large eggs
200g plain flour
1 teaspoon bicarbonate of soda
1/2 teaspoon salt
150g pack of Ocean Spray® Craisins® Dried Cranberries
125g white chocolate chunks or chips
Preheat oven to 190°C/fan oven 170C, Gas Mark 5, 375°F.
Using an electric mixer, beat butter or margarine and sugar together in a medium mixing bowl until light and fluffy. Add eggs, mixing well.
In a separate bowl combine the oats, flour, baking soda and salt. Add to the butter mixture gradually, mixing well after each addition. Stir in the Craisins® Dried Cranberries and white chocolate chunks.
Drop rounded teaspoonfuls of mixture onto un-greased baking sheets. Bake for 10-12 minutes or until golden brown.
Cool on wire rack.
