299g all-purpose baking mix
128g Craisins® Original Dried Cranberries
3 tbsp sugar
3 tbsp butter or margarine, melted
396g (about 2 ½ jars) Ocean Spray® Whole Cranberry Sauce
256g sliced fresh strawberries
128g fresh blueberries
2 tsp fresh lemon juice
Preheat oven to 220°C/fan oven 200C, Gas mark 7, 425°F.
Mix baking mix and dried cranberries. Prepare scones as directed on package for a drop biscuit.
Drop by spoonfuls, forming 8 scones, onto ungreased baking sheet. Bake for 10 to 12 minutes or until golden brown. Cool 10 minutes on a wire rack.
Meanwhile, combine all filling ingredients in medium bowl, mixing well.
Slice scones in half horizontally. Place bottom halves on individual plates; top with 64g of fruit mixture for each scone. Place scone tops on fruit. Top with whipped cream. Garnish with lemon rind, if desired.
