Super Berry Muffins
Makes 12 muffins
10oz/275g plain flour
3oz/75g brown sugar
2oz/50g caster sugar
2 teaspoons baking powder
1 teaspoon salt, optional
¼ pint/150ml milk
¼ pint/150ml vegetable oil
1 egg
170g bag of Ocean Spray Craisins® with Mixed Berries
Sugar for sprinkling
Preheat oven to 200°C/400°F. Grease or line a 12-case muffin tin.
1. Combine flour, sugars, baking powder and salt in a medium mixing bowl.
2. In a separate mixing bowl combine milk, oil and egg. Add the liquid ingredients to the dry ingredients, stirring just until dry ingredients are moist. Stir in Craisins®.
3. Fill each muffin case 3/4 of the way full with mixture. Sprinkle the top of each muffin with sugar.
4. Bake for 18 to 20 minutes or until golden brown. Leave to cool for 5 minutes in muffin tin then remove the muffins from the tin and cool on a wire rack. |

A new study by researchers at America’s Worcester Polytechnic Institute has revealed that cranberry juice changes the properties of certain bad bacteria in the urinary tract. Their findings show that this action creates an energy barrier that prevents the bugs from getting close enough to latch onto cells. And if they can’t take hold, then they can’t cause an infection.
The lead researcher also commented that other recent work in her lab has shown that the effects of regular cranberry juice and No Added Sugar cranberry juice are identical.
The results of the study are published in August’s Colloids and Surfaces: B journal, but we thought we’d save you rushing out to buy a copy!
