Cranberry and Lemon Oat Scones
Serves: 12 scones
With these citrusy scones you don’t need to add jam to enjoy. Try them warm just from the oven.
Ingredients

2.5oz/60g sugar

8oz/225g plain flour

6oz/175g oat bran
-
2 teaspoons baking powder
-
1 teaspoon bicarbonate of soda

3/4 teaspoon salt
-
2oz/50g butter or margarine
-
250g low-fat lemon yogurt
-
1 egg
-
170g pack of Ocean Spray Craisins, sweetened dried cranberries

1 tablespoon sugar
Preparation & Cooking

Preheat oven to 220°C/425°F.

Grease a baking sheet.

Combine dry ingredients in a large mixing bowl.

Work butter or margarine into dry ingredients until butter is the size of small peas, using a pasty blender or fork.

Add remaining ingredients except Dried Cranberries and 1 tablespoon sugar, mixing until dry ingredients are moist.

Stir in Dried Cranberries.

Turn dough onto a lightly floured surface and gather into a ball.

Cut dough into 2 pieces. Pat each half into a 6-inch circle and cut into 6 wedges.

Place all the wedges on a lightly greased baking sheet.

Sprinkle each wedge evenly with sugar.

Bake 15 to 18 minutes or until golden brown.
