Cranberry Banana Bread
Serves: Makes 1 x 1kg/2 1/2lb loaf
Bananas combine with the berry burst of Craisins for an inspired take on this moreish bread.
Ingredients

300g/10oz plain flour

225g/8oz caster sugar

100g/4oz butter or margarine, softened

3 ripe bananas, peeled and cut into 1-2cm/1/2-3/4in chunks

4 tbsp milk

2 eggs
-
2 tsp baking powder

50g/2oz chopped walnuts

170g pack Ocean Spray Craisins, sweetened dried cranberries
Preparation & Cooking

Preheat the oven to 180°C, 350°F, Gas 5.

Grease a 1kg/2lb loaf tin.

Mix the sugar and butter together in a medium mixing bowl until completely blended. Add the banana, milk and eggs, mixing well then add the dry ingredients and mix until just moist.

Stir in the walnuts and dried cranberries and pour the mix evenly into the prepared loaf tin.

Bake for 1 hour or until a toothpick inserted into the centre of the loaf comes out clean. Turn the loaf out of the tin and leave to cool on a wire rack.
