Warm Chicken Salad
Serves: 4
Add that little bit of punch to your salad with a cranberry dressing.
Ingredients
For the salad

1 tbsp olive oil

2 slices thick cut bread, crusts removed

450g/1 lb cooked chicken breast or turkey leftovers, shredded

100g/4oz fine green beans, trimmed and halved

2 little gem lettuces, shredded
-
40g/1 ½ oz rocket or mixed leaves
-
2 oranges, peeled and segmented
For the Dressing

50g/ 2 oz Ocean Spray Craisins, sweetened dried cranberries soaked in 2 tbsp Ocean Spray Cranberry Classic Juice Drink

3 tbsp virgin olive oil

1 tbsp red wine vinegar Chopped Chives - to garnish
Preparation & Cooking

Cut the bread into squares approximately 1cm / 3/8in.

Heat the oil in a heavy based frying pan, and cook the bread over a medium heat for 5 minutes turning once until golden on both sides.

Drain on kitchen paper.

Bring to the boil a small pan of water and cook the beans for 4-5 minutes until just tender. Drain. Arrange the chicken, beans, lettuce, rocket or mixed leaves and orange on plates or in bowls.

In a small pan, gently heat the Craisins, any remaining Cranberry Classic, olive oil and red wine vinegar for 2-3 minutes until warm.

Pour over the salad, garnish with croutons and herbs and serve.
