Warm Chicken Salad

Serves: 4

Add that little bit of punch to your salad with a cranberry dressing.  

Ingredients

For the salad

  • 1 tbsp olive oil  
  • 2 slices thick cut bread, crusts removed  
  • 450g/1 lb cooked chicken breast or turkey leftovers, shredded  
  • 100g/4oz fine green beans, trimmed and halved  
  • 2 little gem lettuces, shredded  
  • 40g/1 ½ oz rocket or mixed leaves
  • 2 oranges, peeled and segmented   

For the Dressing  

  • 50g/ 2 oz Ocean Spray Craisins, sweetened dried cranberries soaked in 2 tbsp Ocean Spray Cranberry Classic Juice Drink  
  • 3 tbsp virgin olive oil  
  • 1 tbsp red wine vinegar Chopped Chives - to garnish      

Preparation & Cooking

  1. Cut the bread into squares approximately 1cm / 3/8in.
  2. Heat the oil in a heavy based frying pan, and cook the bread over a medium heat for 5 minutes turning once until golden on both sides.
  3. Drain on kitchen paper.  
  4. Bring to the boil a small pan of water and cook the beans for 4-5 minutes until just tender. Drain. Arrange the chicken, beans, lettuce, rocket or mixed leaves and orange on plates or in bowls.  
  5. In a small pan, gently heat the Craisins, any remaining Cranberry Classic, olive oil and red wine vinegar for 2-3 minutes until warm.
  6. Pour over the salad, garnish with croutons and herbs and serve.
