Cranberry Muffins

INGREDIENTS

  • 10oz/275g plain flour
  • 3oz/75g brown sugar
  • 2oz/50g caster sugar
  • 2 teaspoons baking powder
  • 1 teaspoon salt, optional
  • ¼ pint/150ml milk
  • ¼ pint/150ml vegetable oil
  • 1 egg
  • 150g bag of Ocean Spray® Craisins® Dried Cranberries
  • Sugar for sprinkling

DIRECTIONS

Preheat oven to 200°C/400°F. Grease or line a 12-case muffin tin.

Combine flour, sugars, baking powder and salt in a medium mixing bowl.

In a separate mixing bowl combine milk, oil and egg. Add the liquid ingredients to the dry ingredients, stirring just until dry ingredients are moist. Stir in Craisins® Dried Cranberries.

Fill each muffin case 3/4 of the way full with mixture. Sprinkle the top of each muffin with sugar.

Bake for 18 to 20 minutes or until golden brown. Leave to cool for 5 minutes in muffin tin then remove the muffins from the tin and cool on a wire rack.
