Cranberry Mostarda

Ingredients
260g of vegetable or chicken stock
1 pinch saffron
Salt, to taste
130g of basmati rice
10g of curry spice blend
60g of carrots, thinly shredded
80g pistachios, chopped
30g of Ocean Spray® Craisins® Original Dried Cranberries
20g orange zest
40g scallions, thinly sliced on a bias
Steps
In a heavy-bottomed sauce pan, combine the wine and sugar and simmer 3 minutes, or until the sugar is dissolved. Stir in the shallots and mustard seeds and simmer 5 minutes. Stir in 2/3 of the cranberries, along with the mustard powder, and simmer until the berries begin to pop. Remove from the heat and stir in remaining berries and mustard oil.
