Cranberry Spinach Salad with Warm Honey Dijon Dressing

Ingredients
200g (7oz) quinoa
Vegetable stock, to cover
50g (2oz) Ocean Spray® Craisins® Dried Cranberries
50g (2oz) pecans, chopped
75g (3oz) feta, crumbled
2 spring onions, finely sliced
Large handful fresh parsley, chopped
Finely grated zest and juice of 1/2 lemon
1tbsp extra virgin olive oil
Steps
Wash and clean the spinach. Divide evenly among 4 salad plates. Top each plate with 2 tbsp Craisins® Dried Cranberries and onion slices.
Combine dressing ingredients in a small glass mixing bowl using a wire whisk. Heat in the microwave on HIGH for 1 minute or until warm. Drizzle over the salad and serve.
