Cucumber Salad

Ingredients
8ml white wine
40g sugar
40g minced shallots (about 1 large shallot)
40g yellow or black mustard seeds
1L Ocean Spray® Cranberries
10g mustard powder
1 pinch salt
1 teaspoon mustard oil
1 pinch Aleppo chili flakes (substitute any red chili flake)
Steps
Place the sliced cucumbers in a bowl and sprinkle with salt, to taste. Set aside.
In a small bowl, whisk together the rice wine vinegar, honey or maple syrup , sesame oil, olive oil, cranberries , white miso and ginger. Drizzle the mixture over the cucumbers.
Sprinkle salad with sesame seeds, more dried cranberries, blueberries and crushed red pepper, to taste. Serve immediately.
