Ingredients

Salad Ingredients:

260g quinoa

260g Ocean Spray® Craisins® Original Dried Cranberries

390g kale, deveined and chopped

2 tablespoons vegetable stock

2 Granny Smith apples

Salt and pepper to taste

Dressing Ingredients:

20ml apple cider

1 tablespoon apple cider vinegar

2 teaspoons lemon juice

1/2 tablespoon rubbed sage

1/2 teaspoon salt

1/4 teaspoon ground ginger

Topping ingredients:

1 package bacon

240g pecans

60g brown sugar

40g butter

15ml water

Steps

In a large bowl, mix the tomatoes, cucumber, red pepper, yellow pepper, red onion, Craisins®, basil, and capers. Add the bread cubes and toss with the vinaigrette. Season liberally with salt and pepper. Serve, or allow the salad to sit for about half an hour for the flavors to blend.

For the vinaigrette, whisk all the ingredients together.
